We made Nigella Lawson's recipe for chicken tortilla soup this week. Very easy and so good.
Serves 6 as a main course
3 1/2 quarts chicken broth
2 teaspoons celery salt
2 teaspoons ground cumin
3 bay leaves
1 small clove garlic, peeled and minced
2 fresh red chiles, seeded and chopped
4 scallions, finely sliced
3 cups cooked shredded chicken
Heat the broth in a large pan, and add the celery salt, cumin, bay leaves, garlic, chiles and scallions.
Let the soup boil gently for about 10 minutes, then take off the heat and add the shredded chicken. Her recipe has you fry up tortilla shells, but I just used baked tortilla chips.
Serve with
2 cups grated cheddar cheese
1 avocado, peeled and diced
3 tablespoons chopped fresh cilantro
3 limes, cut into quarters
Perfect for that special night!
