A Romantic Dinner with Appetizers

Stan and I had a early dinner with appetizers. Shrimp with bacon wrapped around them and a small glass of St-Germain.

Baked Brie With Pistachios And Dried Fruit

Preheat oven to 350
Place the cheese on a rimmed baking sheet. Prick the top with a fork in a dozen places and drizzle
with 1 1/2 teaspoons of the brandy. In a bowl, toss the remaining brandy with apricots, cranberries, and pistachios. Scatter the fruit mixture evenly over the top of the round. Bake until the cheese warms and softens, 8-10 min. Transfer the round to a plate and serve with baguette slices or crackers.

1 round Brie cheese
2 tbsp. Cognac or orange-flavored brandy
1/3 cup dried apricots, cut into thin strips
3 tbsp. dried cranberries
3 tbsp.pistachios
toasted thin baguette slices or crackers
Serves 10-12

Found the recipe in a Williams Sonoma cookbook

It was a perfect meal and not that much work. Hope you enjoy it.
Bon Appetit!
